Here is the recipe of the most loved curry in our house and from our most favourite cuisine-Thai red curry.
This tastes awesome with appams or steamed rice.
Ingredients:
For the paste
2 Onions medium
10 basil leaves
1 tsp cumin seeds
20 dry red chillies de-seeded and boiled also if fresh Thai red chilli is available use a combination will taste better
2 tsp coriander seeds
2 stalks of lemon grass
1/4 tsp lemon rind
2 tsp ginger garlic paste
1/2 cup grated coconut
6-7 peppercorns (white peppercorns. If you're using black peppercorns then use lesser quantity.)
Other Ingredients:
2 cups coconut milk
5-6 baby corns sliced 1/4 cup broccoli
1/4 cup yellow and green capsicum diced
8-10 mushrooms sliced
1 bundle of lemon grass
1 tsp sugar
2tsplemon juice
3 tbsp oil
water as required for the gravy
This is the way we go ahead:
Boil the red chillies ,cool and paste this along with other ingredients of paste till smooth.
Now heat oil ,add the paste and cook till it leaves oil, add the coconut milk and lemon grass and boil for 5-7 min and then strain and keep aside.
Now take another pan add oil and saute the vegetable as mentioned add the strained curry and paste (2tbsp) ,put to boil again and add water and other ingredients.
Steaming hot Thai red curry is ready to serve. Do try it out am sure you will love it!
